Bananas Foster Bread Pudding
Ingredients:
4 large egg yolks
½ cup milk
1 ¼ cups heavy cream
2 medium bananas
½ cup sugar
1 cup brown sugar
1 ½ tsp cinnamon
¼ cup rum
¾ tsp vanilla extract
3 cups bread cubes
Instructions:
Preheat the oven to 350°F (175°C). Brush six 8-ounce ramekins or custard cups with melted butter.
Toast the bread cubes in the oven until light golden brown, about 10 minutes.
Heat the milk and cream in a medium saucepan until hot but not boiling.
In a food processor, puree the egg yolks and bananas until smooth. Alternatively, you can mash the bananas and yolks with a fork or masher. We used our Cuisinart, and it made this step super easy.
In a large bowl, combine the brown sugar, sugar, and cinnamon. Whisk in the hot milk and banana mixture, mixing well to combine. Slowly whisk in the rum and vanilla extract. Add the bread cubes to the mixture and toss well to coat. Let the mixture sit for 15 minutes.
Divide the mixture evenly among the six dishes. Place them in a roasting pan. Lightly grease a piece of tin foil and place it, greased side down, over the pan to cover.
Bake for 45 minutes, then remove the foil and bake for an additional 10 minutes. Cool for 15 minutes and invert onto a plate. Serve with vanilla ice cream and Foster Sauce. We like to garnish with a few banana slices that we have torched with our brulée torch.
Foster Sauce
Ingredients:
1 cup brown sugar
1 cup butter
¼ cup rum
Instructions:
Melt the butter and brown sugar in a saucepan over medium heat until the sugar is dissolved.
Remove from heat and slowly stir in the rum.
