Our recipe takes succotash to the next level by adding a touch of richness with butter and fresh bursts of flavor from basil and lemon. The optional addition of okra adds a unique twist, while the final garnish of Roma tomatoes offers a fresh and colorful finish. For our version, we chose to pair it with a perfectly seared swordfish steak, as pictured below. The mild, meaty flavor of the swordfish pairs wonderfully with the sweet corn, tender edamame, and fresh herbs in the succotash, creating a balanced and satisfying meal that's both hearty and light. This combination brings out the best in both the dish and the protein, making it a perfect summer pairing.

Bright Summer Succotash
3 Tbsp extra-virgin olive oil
1 small red bell pepper, diced (about 3/4 cup)
1 large shallot, diced (about 1/4 cup)
2 cloves garlic, minced
1/2 cup sliced okra (optional)
1 cup corn kernels, cut from 2 cobs, or 1 cup thawed frozen corn
3/4 cup frozen shelled edamame, thawed
1/2 tsp kosher salt
2 Tbsp chopped fresh basil
1 lemon, zested and juiced
1 Tbsp unsalted butter
1 Roma tomato, diced
Instructions:
Heat the olive oil in a medium skillet over medium-high heat. Add the diced red bell pepper and shallot, and cook for about 4 minutes, stirring often with a wooden spoon.
Add the minced garlic and cook for 1 more minute, stirring constantly.
Stir in the sliced okra (if using) and cook for 1 minute. Then add the corn, edamame, and salt, and cook for an additional 5 minutes, stirring occasionally.
Add the butter and stir until it melts completely.
Remove the skillet from the heat, and stir in the fresh basil, lemon zest, and lemon juice.
Garnish with the diced Roma tomato before serving.
