Ingredients:

  • 2 boneless, skinless chicken breasts, sliced into thin pieces

  • 1 cup flour

  • 1 tsp salt

  • ½ tsp fresh ground pepper

  • 1 tsp garlic powder

  • 2 Tbs good olive oil

  • 5 Tbs unsalted butter

  • 2 cloves garlic, minced

  • 8 oz mushrooms

  • 1 can (14 oz) quartered artichoke hearts in brine, drained

  • 1 red bell pepper, sliced

  • 2 Tbs capers, drained and rinsed

  • ¾ cup dry sherry or dry white wine

  • 1 cup heavy cream

  • Juice and zest of one lemon


Instructions:

  1. In a wide bowl or dish, mix flour, salt, and pepper. Coat each piece of chicken in the flour mixture.

  2. Add the oil and 1 tablespoon of butter to a skillet over medium-high heat. Let the pan heat up for a few minutes.

  3. Sear the chicken for 4-5 minutes per side, or until golden brown. Ensure the pan is large enough for proper searing—crowding will prevent a good sear. Transfer chicken to a plate once seared.

  4. In the same skillet, add the remaining butter, garlic, mushrooms, artichoke hearts, red bell pepper, and capers. Sauté for 5-6 minutes until the veggies start to soften.

  5. Pour in the sherry or wine and scrape up any brown bits from the bottom of the pan. Let the liquid simmer until reduced by half (about 2-3 minutes).

  6. Stir in the cream, lemon juice, and zest. Add the chicken back into the pan and let it cook for 5 minutes or until the chicken is cooked through and the sauce has thickened. Taste the sauce and adjust the seasoning if needed. Serve as is or with pasta.
