Chocolate Lava Cakes


Ingredients:

  • Nonstick baking spray

  • 4 oz bittersweet chocolate, chopped

  • 8 Tbs (1 stick) unsalted butter

  • 3 large eggs

  • ½ cup granulated sugar

  • ¼ cup all-purpose flour

  • 1 tsp pure vanilla extract

  • 1 tsp instant coffee granules

  • ½ tsp kosher salt

  • 4 Tbs powdered sugar

  • Vanilla ice cream (for serving)


Instructions:

  1. Preheat the oven to 400°F. Spray 4 ramekins with nonstick baking spray and place them on a baking sheet.

  2. In a medium microwave-safe bowl, add the chocolate and butter. Microwave on high in 30-second intervals, stirring thoroughly after each, until the mixture is completely melted and smooth. Let it cool slightly (about 5 minutes).

  3. Whisk the eggs and granulated sugar into the cooled chocolate-butter mixture. Add the flour, vanilla, coffee granules, and salt, whisking just until the ingredients are combined.

  4. Divide the batter evenly among the prepared ramekins. Bake for 13 to 15 minutes, until the sides are set and the center is slightly soft.

  5. Let the cakes cool for 1-2 minutes. Carefully place an individual serving plate on top of each ramekin and flip it over, allowing the cake to release onto the plate. Remove the ramekin.
