4 Tbsp (1/2 stick) unsalted butter
1 cup basmati or long-grain white rice
1 3/4 cups reduced-sodium chicken broth
2 limes, zested and juiced
1/3 cup chopped fresh cilantro (plus more for garnish)

1/4 tsp freshly ground black pepper
Directions:
In a medium saucepan, melt 1 tablespoon of the butter over medium-high heat. Add the rice and sauté until it begins to lightly brown, about 2 to 3 minutes. Add the broth and bring to a boil over high heat. Reduce the heat to medium-low, cover, and simmer for about 15 minutes, until the rice is tender. Do not open the pot during this time. Fluff the rice with a fork.
While the rice is cooking, melt the remaining 3 tablespoons of butter in the microwave, about 30 seconds. Stir in the lime zest and juice.
