1️⃣ Prepare the Fish: In a shallow bowl, mix almond flour and salt. Rinse the cod fillets and pat dry with a paper towel. Dredge the fish in the almond flour mixture, ensuring an even coating.

2️⃣ Sear the Cod: Heat 2 Tbsp olive oil and 1 Tbsp grapeseed oil in a large skillet over medium-high heat. Once hot, add the cod fillets (working in batches if needed to avoid crowding). Sear for 2-3 minutes per side until golden brown. Remove and set aside.

3️⃣ Make the Sauce: In the same skillet, add chicken stock, lemon zest, lemon juice, and capers. Scrape up any browned bits from the bottom of the pan and simmer until reduced by nearly half.

4️⃣ Finish & Serve: Remove the sauce from heat and stir in the remaining 1 Tbsp grapeseed oil for richness. Divide the cod fillets onto plates, drizzle with the sauce, and sprinkle with fresh parsley.
