  • 2 sticks butter, at room temperature, plus more for pan

  • 5 pounds potatoes (Russet or Yukon Gold)

  • 1 package cream cheese (8 oz), softened

  • 1 cup heavy cream

  • 1 tsp seasoned salt

  • 1 ½ tsp kosher salt

  • 1 tsp black pepper


Instructions:

  1. Preheat the oven to 350°F. Generously butter a 4-quart baking dish.

  2. Peel and cut the potatoes into 1-inch chunks. Place in a large stockpot, cover with water, add ½ tsp salt, and bring to a boil. Reduce heat to a simmer and cook until fork-tender, 20–25 minutes.

  3. Drain the potatoes and return them to the dry pot. Mash over low heat with a potato masher to release steam.

  4. Turn off the heat and add 1 ½ sticks butter, cream cheese, heavy cream, seasoned salt, kosher salt, and pepper. Mash until smooth, then stir to combine thoroughly. Taste and adjust seasoning if needed.

  5. Spread the potatoes in the prepared baking dish. Dot the top with pats of the remaining butter. Bake for 20–30 minutes, until the butter melts and the potatoes are heated through.
