Crème Brûlée (Vanilla Bean)
The Crème:
1 ½ cups heavy cream
½ cup whole milk
4 tbsp sugar (divided)
6 egg yolks
½ vanilla bean or 1 ½ tsp vanilla extract
Preheat the oven to 325 degrees.Have your 8 oz ramekins or custard cups ready, along with a roasting pan and one piece of aluminum foil large enough to cover the pan.
In a saucepan over medium heat, combine the milk, cream, 2 tbsp sugar, and vanilla bean (split with seeds scraped into the liquid). Heat the mixture to just scalding (meaning to heat it to the moment just before it boils).
In a medium bowl, combine the remaining 2 tbsp sugar and the egg yolks. Add a small amount of hot milk from your pan to the bowl of yolks and sugar, and whisk together. Pour the egg mixture back into the saucepan and cook until slightly thickened. Strain into a large bowl and divide the custard among the ramekins.
Place the cups in your roasting pan and add enough very hot water to bring it 1/3 of the way up the sides of the ramekins. Cover tightly with aluminum foil. Bake for 35–45 minutes (the custard should still jiggle a little but be mostly firm). Remove from the oven and chill in the refrigerator for 2–3 hours.
The Brûlée:
We like to use raw sugar to make the best caramelized top. Not everyone has a torch, so to make this simple, we use the broiler in our oven.
Sprinkle about 1 tbsp of sugar to coat the top of the custard. Place under the broiler until the sugar dissolves and starts to brown or caramelize. Here, we garnished ours with fruit.
