For the Lemon Garlic Mixture:

  • 2 Tbsp salted butter, softened to room temperature

  • 1 Tbsp freshly chopped chives

  • 2 Tbsp minced garlic

  • ⅛ tsp kosher salt

  • ¼ tsp freshly ground black pepper

  • 1 lemon, zested and juiced


For the Fish:

  • 2 Tbsp good olive oil

  • 2 swordfish fillets, 1 inch thick

  • Kosher salt and freshly ground black pepper

  • 1 lemon, sliced for garnish


Instructions:

  1. Preheat your oven to 400°F and position the rack in the middle. In a small pan, combine all the ingredients for the Lemon Garlic Mixture and stir until fully mixed. Set aside.

  2. Pat the swordfish fillets dry with paper towels to remove any excess moisture. Sprinkle both sides of the fillets evenly with kosher salt and freshly ground black pepper. Set aside.

  3. In a large, ovenproof pan, heat the olive oil over medium-high heat. Once the oil is hot, add the swordfish fillets and cook undisturbed until browned on one side, about 3 minutes. Carefully flip the fillets, turn off the burner, and immediately transfer the pan to the preheated oven.

  4. Roast the swordfish for 5-6 minutes, or until the top is golden and the center is just cooked through (I set a timer for 5 minutes, then check if it needs an additional minute; be careful not to overcook as the fish can become tough). A minute before the fish is done in the oven, heat the small pan with the lemon-garlic mixture over medium-high heat, stirring constantly, just until melted and bubbly. Turn off the heat, place one swordfish steak on a plate or both on a platter, and pour the lemon-garlic mixture and any pan juices over the cooked fish. Garnish with lemon slices.
