Lite and Savory Bolognese SauceServes 6-8

Ingredients:

  • 1 onion, peeled and minced (about 1 cup)

  • 1 carrot, peeled and minced (about 1 cup)

  • ½ bulb fennel, minced (about 1 cup)

  • 2 cloves garlic, minced

  • ¼ cup extra virgin olive oil

  • 4 Tbs unsalted butter

  • 1 lb. ground veal

  • ¾ cup prosciutto, chopped

  • 1 cup dry white wine

  • 2 (28 oz) cans diced tomatoes

  • 1 Tbs coarse salt

  • 1 ½ tsp ground black pepper

  • 1 lemon (zested, chopped, and juiced)

  • 2 Tbs fresh sage, coarsely chopped

  • Shaved parmesan for garnish

  • Lemon wedges for serving

  • Extra fresh sage for garnish


Instructions:

  1. Finely mince the onion, carrot, and fennel bulb. Use a food processor for ease, but hand chopping is equally effective for a rustic texture.

  2. Heat olive oil and butter in a heavy-bottomed pot over medium heat. Add minced vegetables and garlic. Sauté on low, stirring occasionally, until very soft (about 8-10 minutes).

  3. Raise the heat, add veal and prosciutto. Cook until the meat is no longer pink, stirring frequently.

  4. Pour in white wine and cook gently, stirring occasionally until most of the liquid evaporates (about 5 minutes).

  5. Stir in diced tomatoes, salt, pepper, fresh sage, lemon zest, and juice. Cover the pan, lower the heat to medium-low, and simmer for 45 minutes until the sauce reaches a medium-thick consistency. Add water or stock if the sauce thickens too much.

  6. Serve over bucatini or your favorite pasta, and garnish with shaved parmesan, extra sage, and lemon wedges.
