1–1 ½ lb fresh mahi mahi, cut into fillets with skin removed
Old Bay seasoning, to taste
1 Tbsp good olive oil
2 Tbsp fish sauce
2 Tbsp fresh lemon juice
1 Tbsp low-sodium soy sauce
2 tsp packed light or dark brown sugar
4 cloves garlic, minced or pressed
4 Tbsp unsalted butter, cut into pieces
1 Tbsp chopped fresh Italian flat-leaf parsley
½ Tbsp chopped fresh Thai basil
Recipe:
On a large plate or platter, season the mahi mahi fillets with Old Bay seasoning on all sides, to taste. Set the fish aside to rest until they reach room temperature, about 20 minutes.
In a small bowl or measuring cup, combine the fish sauce, lemon juice, soy sauce, brown sugar, and garlic. Whisk the mixture well to blend all the umami flavors, and set aside.
Heat the oil in a large nonstick skillet over medium-high heat. Once the oil shimmers, gently swirl the skillet to evenly coat the bottom. Add the mahi mahi fillets to the skillet. Cook the fish undisturbed until a golden-brown sear appears on the bottom and the sides are cooked about halfway up the fillets, about 3–4 minutes. It is very important to cook it undisturbed so that your fish doesn’t stick and you get that beautiful sear. Using a fish spatula (or any similar utensil), carefully flip the fillets onto the other side. Cook for another 1–2 minutes, or until the fish fillets are opaque and just cooked through.
Reduce the heat to medium-low. Pour the sauce into the skillet, followed by the butter pieces. Let the sauce and butter simmer until the butter melts, about 1–2 minutes. Then sprinkle the parsley and basil over the fillets. Grab a spoon and baste the fillets with the sauce. Turn off the heat and remove the skillet from the burner. Continue basting and gently swirling the skillet to move the fillets around in the sauce so they absorb the flavors nicely. Do this for about 20 seconds using the residual heat.
Serve your pan-seared mahi mahi with the sauce alongside your favorite side items. We chose to serve ours atop a bed of sushi rice.
