Ingredients:
2 lb salmon, skin removed
2 cups panko breadcrumbs
1 tsp onion powder
1 tsp kosher salt
½ tsp freshly cracked pepper
6 tbsp good olive oil
Lemon wedges, for garnish
Chopped fresh parsley, for garnish

Sauce Ingredients:
1 cup mayonnaise
2 tbsp lemon juice
1 tbsp Dijon mustard
1 tbsp hot sauce (we use Frank's)
½ tsp paprika
2 garlic cloves, grated or pressed
1 tsp chopped chives
2 tbsp capers, drained and roughly chopped
½ tsp freshly cracked pepper
¼ tsp salt
Instructions:
In a bowl, mix all the sauce ingredients together. Cover and refrigerate for at least 15 minutes. (The sauce can be made ahead and stored in an airtight container in the refrigerator for 2 to 3 days.)
Cut the salmon into bite-sized cubes. In a large bowl, combine the breadcrumbs, onion powder, salt, and pepper.
Heat 2 tablespoons of olive oil in a large skillet until hot enough that a breadcrumb sizzles when added. Line a plate with paper towels.
Toss the salmon cubes in the breadcrumb mixture, pressing the crumbs onto all sides so they stick.
Add 1/3 of the salmon cubes to the pan and fry, flipping once, until golden brown (about 1 ½ to 2 minutes per side). Remove and place on the prepared plate to drain. Repeat the process with the remaining salmon, adding 2 more tablespoons of oil each time.
Arrange the salmon bites on a serving platter and garnish with lemon wedges and parsley. Add bamboo picks for an elegant touch. Serve with the remoulade sauce.
