1 tsp extra-virgin olive oil
Salt and pepper to taste
4 salmon fillets (skin removed), each slightly over an inch thick
Instructions:

Heat the oil in a nonstick skillet over medium-high heat until hot and shimmering.
Add the salmon to the pan and cook without moving it until the bottom is crispy, about 4 minutes.

2 (10-12 oz) bags of frozen riced cauliflower
