2 boneless, skinless chicken breasts, butterflied and then cut in half
Kosher salt and freshly ground black pepper
All-purpose flour, for dredging
6 Tbs unsalted butter
5 Tbs good extra-virgin olive oil
1/3 cup fresh lemon juice, plus the zest of one lemon
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped
Instructions:
Season the butterflied chicken breasts generously with kosher salt and freshly ground black pepper. Dredge them lightly in flour, shaking off any excess to create a thin coating. Set aside on a plate.
In a large skillet over medium-high heat, melt 2 tablespoons of butter with 3 tablespoons of olive oil. Once the butter and oil mixture begins to sizzle, carefully place 2 pieces of chicken in the pan. Sear each side for about 3 minutes until golden brown. Transfer the chicken to a plate. Repeat the process with the remaining chicken, using an additional 2 tablespoons of butter and 2 tablespoons of olive oil. Once the chicken is browned, remove the pan from heat and set the chicken aside on the same plate.
In the same skillet, add the fresh lemon juice, lemon zest, chicken stock, and rinsed capers. Return the pan to the heat and bring the sauce to a boil, scraping up any browned bits stuck to the bottom of the pan (these are packed with flavor!).
