Lean Ground Turkey

Turkey is a lean source of protein, making it a popular alternative to beef for lighter, heart-healthy burgers. Using a mix of 93% lean and 85% lean ground turkey balances tenderness with lower fat content, ensuring that the burgers remain moist and flavorful while being a nutritious option.
Duke’s Light Mayonnaise

Duke’s mayonnaise is known for its rich, tangy flavor, which adds moisture and a subtle creaminess to the turkey burger mixture. The light version has fewer calories, making it a healthier choice that still brings out the best in your burger.

Tips, Serving Suggestions, and Storage Advice

Use Mixed Ground Turkey: Combining 93% and 85% lean turkey gives the perfect balance of moisture and flavor.
Grate and Squeeze Onion: Removing moisture helps the patties hold together better.
Chill Before Grilling: Freezing for 20 minutes firms the patties for easier grilling.
Oil Your Hands: A little oil on your hands can make forming patties easier with a sticky mixture.
Make an Indent in Each Patty: This helps them cook evenly and prevents puffing up on the grill.
Preheat the Grill Well: Aim for 450-500°F for best results.
Oil the Grates: Helps prevent sticking, especially with lean turkey.
Add Cheese Near the End: Place cheese on the patties for the last 2 minutes for perfectly melted topping.

Ingredients:

2 pounds 93% lean ground turkey (or 1 lb 93% lean and 1 lb 85% lean)
2/3 medium yellow onion, finely grated and squeezed of excess moisture
3 cloves garlic, finely chopped or grated
3 tablespoons Duke's light mayonnaise
3 teaspoons Worcestershire sauce
2 1/4 teaspoons kosher salt
1 teaspoon ground black pepper
Oil for the grill grates
Burger buns of your choice
Toppings and condiments of your choice (cheese, lettuce, tomatoes, thinly sliced onion, pickles, mayonnaise, mustard, ketchup, etc.)
Instructions:
Line a baking sheet or large plate with parchment paper or foil and set aside. Grate the onion by placing a few paper towels on a cutting board, setting a box grater on top, and grating the onion into fine shreds. Wrap the grated onion in the paper towels and wring out excess moisture over the sink or a bowl. Set aside.
In a large bowl, add the ground turkey, grated onion, garlic, mayonnaise, and Worcestershire sauce. Season with kosher salt and ground black pepper. Mix with your hands until just combined; avoid overmixing to keep the burgers tender.
Divide the mixture into 6 equal portions, forming each into a 1-inch thick burger patty. If desired, spritz a bit of olive oil on your hands to handle the patties more easily. Place the patties on the prepared baking sheet and transfer to the freezer for at least 20 minutes to firm up.
Preheat a grill to medium-high, about 450-500°F. Just before grilling, oil the grates by spritzing a wad of paper towel with nonstick spray and using grill tongs to rub it over the grates.
Remove the patties from the freezer. Finish forming them into 1-inch thick patties, pressing an indent in the center of each patty with your thumb. Grill the patties for 6-7 minutes per side, or until the internal temperature reaches 165°F. If adding cheese, place it on the burgers with 2 minutes of grilling time left.
Toast your buns if desired, and build your burgers with your preferred toppings and condiments. Enjoy!
