Ingredients:

SIMPLY THE BEST CHICKEN PARMESAN

For the breading:


  • 1 egg

  • ¼ cup milk

  • ½ cup flour

  • 3 cups Panko bread crumbs

  • 1 Tbs minced garlic (4–5 cloves)

  • ½ cup Parmesan cheese, grated

  • 1 Tbs fresh basil, chopped (or ½ tsp dried if unavailable)

  • 1 Tbs fresh oregano, chopped (or ½ tsp dried if unavailable)

  • ¼ cup flat-leaf parsley, chopped

  • 4 boneless, skinless chicken breasts, butterflied and halved


For cooking and assembly:


  • ½ cup olive oil

  • 2 cups Tomato Basil Sauce (see our recipe for Tomato Basil Marinara Sauce)

  • 1 lb spaghetti, cooked al dente

  • 8 slices mozzarella cheese (thinly sliced; fresh or Sargento brand recommended)

  • 4 Tbs Parmesan cheese, grated

  • 4 fresh basil leaves, chiffonade (for garnish)


Instructions:

  1. Preheat oven to 400°F and line a baking sheet with foil.

  2. In a large bowl, mix the bread crumbs, garlic, Parmesan, basil, oregano, and parsley. In a separate bowl, beat the egg with milk. Place flour in another bowl.

  3. Season the chicken breasts with salt and pepper. Coat each piece in flour, dip in egg wash (letting excess drip off), and coat with the bread crumb mixture, pressing lightly to adhere. Set aside.

  4. Heat 1/4 cup olive oil in a large sauté pan over medium-high heat. Once hot, add chicken without overcrowding. Sauté for about 3 minutes per side until browned. Transfer chicken to the prepared baking sheet. Repeat for remaining chicken adding a bit more olive oil each time.

  5. Top each piece of chicken with a mozzarella slice and sprinkle with ½ Tbs Parmesan. Bake for 2 minutes or until cheese melts.

  6. In a large saucepan, heat the Tomato Basil Sauce and add the spaghetti, mixing until coated. Transfer spaghetti to plates, top each with a piece of chicken, and garnish with basil.
