In 1999, Tara moved to Hawaii, and it was there that she fell in love with food. Being in her early 20s and coming from the quaint little town of Hamlin in Lincoln County, her taste buds hadn't yet matured. As you can imagine, living in Hawaii with its diverse cuisine—from Hawaiian to Asian to American and more—she began trying many new foods. One of her favorites from the islands was poke, and after returning to the mainland, she knew she had to learn how to make it. Special thanks to our Hawaiian friend Cory Vidinha for this recipe.

Spicy Tuna Poke
1 lb. small cubed Ahi (sushi grade)
1 Tbsp low-sodium soy sauce
¼ tsp Gochugaru powder (Korean chili powder)
1 Tbsp plus 1 tsp Sriracha (Cory’s measurement is one time around the bowl per pound)
¾ cup sliced onion (white or red)
½ cup green onion (cut on the bias)
2 tsp sesame oil
2 Tbsp mayo
1 Tbsp Tobiko (optional, it can be hard to find)
Pour the soy sauce over the tuna and set it aside. In a bowl, combine mayo, chili powder, Sriracha, and sesame oil. Pour the mixture over the tuna, then add your onions. Stir well and serve.
